Head Chef Adam Meier Brings Experience & Innovation

The banquet rooms and restaurants at Copper River Country Club are wonderful venues, bringing a fabulous look and feel to any event held within them. But no wedding, business meeting, or special event is a success without great food, beautifully presented.

Copper River Country Club is privileged to have Head Chef Adam Meier creating wonderful dishes and developing outstanding menus for weddings, banquets, business meetings, and of course, the Restaurant at Copper River.

Chef Adam graduated from the California Culinary Academy - part of Le Cordon Bleu - in 1981. His fellow academy alumni include Cheryl Forberg, is a New York Times best-selling author and private chef for George Lucas; Michelle Mah, chef de cuisine for the Slanted Door in San Francisco; and multiple James Beard Foundation award-winner Charlie Trotter.

Chef Adam has his own impressive resume. Since graduating, he has worked for privately owned restaurants, chain restaurants, a 250 room hotel, and a casino. He has also been a business owner, running his own café for 5 years. He most recently was the executive chef at San Joaquin Country Club, adding specific country club restaurant experience to his already extensive culinary history.

He very much enjoys the country club experience because as a chef, it's one of the few settings where he gets to do everything from banquets to a la carte services, restaurant menus to brunches, and events from wedding receptions to private parties.

"What I love most about Copper River," says Chef Adam, "Is that the Tatham family are the best people I have ever worked for. The members are wonderful, the crew is amazing, and I get to work with my son!"

Chef Adam can't pin down one favorite dish, but he loves to bake. You can see the evidence each week in the dessert section of our Thursday Dinner Menu

When he's not enjoying his own Copper River Restaurant creations, he enjoys eating at Pismo's Coastal Grill, Campagnia, and MaRoo. He admires the unwavering vision of Chef Thomas Keller of The French Laundry.
